The three things that ruin dried herbs
Light, heat and moisture are what make dried herbs go stale. Light fades color and breaks down the aromatic oils, so don't keep jars on a sunny windowsill. Heat speeds that up, so keep herbs away from the stove, oven and dishwasher. Moisture causes clumping and mold; in humid Central Texas summers, never leave a bag of herbs open.
The best containers for dried herbs
An amber or dark glass jar with a tight lid is the best container for dried herbs. Clear glass works if the jar lives in a dark cupboard. The resealable bag your herbs came in is fine for a few months if you press the air out. Avoid plastic tubs for strongly scented herbs, because plastic can absorb their aroma.
How long dried herbs last
Dried herbs last months to years depending on their form. Whole roots, barks and berries: about 2–3 years. Cut leaves and flowers: about 1–2 years. Powders: about 6–12 months. Seeds for planting: 1–3 years kept cool and dry. These are general guidelines; your herbs will tell you when they've faded.
How to tell if a dried herb has gone stale
A stale herb has faded color, little smell when crushed, and a flat taste. Stale herbs are usually just weaker, not harmful. Throw out anything that smells musty or shows any sign of mold.
Should you refrigerate or freeze dried herbs?
Most dried herbs do not need the refrigerator; a cool, dark cupboard is better. Refrigerators are humid, and moisture is what spoils dried herbs. Freezing can help powders you won't finish within six months: use an airtight container, and let it reach room temperature before opening so condensation doesn't form inside.
Label and date every jar
Write the herb's name and the date on every jar. Many dried herbs look alike once they're out of the bag, and the date tells you when it's time to restock.
